Panqueques franceses (crepes)
INGREDIENTES:
- 1 taza de leche
- 2 cdas. de manteca
- 2 huevos batidos
- 1/2 taza de harina
- 1 cta. polvo de hornear
- 1/2 cta. de sal
Calentar la leche con la manteca. Enfriar un poco y agregar el resto de los ingredientes.
Batir o licuar hasta que esté suave.
Se fríen usando un una sartén mediana o una especial para panqueques.
Se calienta bien la sartén, se engrasa con manteca, aceite o tocino apenas para que la masa se deslice fácilmente, ya que es líquida.
Se doran de un lado y se dan vuelta con cuidado.
Crepes suzettes
A la masa anterior se le agrega 1 cta. de ralladura de limón o naranja.
Se prepara una salsa calentando bien 6 cucharadas de manteca derretida, 1 taza de azucar impalpable, 2 ctas. de ralladura de naranja, 1/3 de taza de jugo de naranja y 1/3 taza de curacao.
Se agregan los panqueques y se lleva a punto de hervor.
Se añade 1/3 taza de ron, se calienta y se incendian.
Se sirven inmediatamente.
